Lemon Berry Batter

Lemon Berry Batter is a special, limited-time ice cream flavor from Cold Stone Creamery. You can get it from February 18, 2026, through May 12, 2026. It starts with a base of Lemon Cake Batter™ Ice Cream. Then, a worker adds four extra items by hand on a very cold stone slab kept at about 16°F. These extras are Lemon OREO® Cookies, Lemon Pie Filling, and fresh Strawberries. They make this special mix when you order it. A worker takes a scoop of the base ice cream and puts it on the cold stone, places the extra items on top, and then uses a metal spatula to chop and mix everything together until it’s spread out evenly.

Lemon Cake Batter™ Ice Cream is one of Cold Stone’s flavors with the strongest lemon taste. It’s made like their other cake batter flavors, but with lemon flavor added. This gives it a bright, tangy-sweet taste. It’s not just a base for the other flavors; it adds a lot of its own flavor, too. The Lemon OREO® Cookies add a crunch and a strong lemon-cream taste. The Lemon Pie Filling adds a smoother, even tangier layer that coats the ice cream in the bites where you get it. The Strawberries add a fresh, juicy tartness that makes the whole flavor feel lighter. Together, these four parts create a taste that’s like a deconstructed lemon berry tart, but all mixed into ice cream.

Lemon Berry Batter is a vegetarian option. Since it’s a new flavor for a limited time starting in February 2026, Cold Stone hasn’t yet shared the calorie counts in their official nutrition guide. Cold Stone’s waffle cones and bowls are made fresh right in the store at most locations. They use a special batter and cook it in a waffle iron. This is different from other chains that use cones from a package. When they are freshly made, the cones come out warm and soft before they cool down and become crispy. For the Dough For It!™ ice cream, this warm, slightly sweet taste of the cone is a direct contrast to the very cold ice cream. The warmth melts the ice cream just a little where they touch, and the cone itself gives a crunchy texture. This is something you just can’t get from a paper cup.

Taste Profile and Texture

The eating experience moves between sweet and tart in a way that feels intentional rather than accidental. The Lemon Cake Batter™ base establishes the flavor direction, the Lemon OREO® Cookie pieces deliver crunch and sweetness, the Lemon Pie Filling amplifies the citrus intensity in certain bites, and the Strawberries provide moments of fresh-fruit relief. The cold stone folding technique means the distribution of these components varies from bite to bite, which keeps the experience dynamic across the full serving. This is one of the more brightness-forward Creations™ on the seasonal menu.

ComponentTexture Contribution
Lemon Cake Batter™ Ice Cream baseDense, smooth, and creamy at 16°F. High butterfat produces a coating mouthfeel. Slightly softer than a standard cake batter base due to lemon compound integration.
Lemon OREO® CookiesProvide the primary crunch in this Creation™. The cookie wafer softens slightly on the cold stone but retains structure. The cream filling distributes into the base during folding.
Lemon Pie FillingSilky and gel-like. Distributes unevenly during folding, creating pockets of intensified tartness rather than a uniform layer.
StrawberriesFresh and slightly firm. Release a small amount of moisture into the base during folding, locally loosening the cream and introducing floral-sweet flavor near each piece.
Waffle Bowl (if selected)Warm, crispy shell adds a buttery baked note that anchors the bright citrus profile and prevents the overall experience from reading as too tart.

Ordering and Occasion Recommendations

  • Best occasion. A warm-weather afternoon treat, a spring or Easter outing with family, or a post-dinner dessert when the palate is ready for something bright and refreshing rather than heavy.
  • Best paired with. Follows well after a light or savory meal. The citrus profile reads as a natural palate cleanser rather than an additional richness layer.
  • Timing note. Available only through May 12, 2026. If you plan to visit for this specific Creation™, confirm it is still available at your local store before making the trip.
  • Vessel pick. Waffle Bowl for all sizes. The bowl format is particularly important for this Creation™ because it keeps the Lemon Pie Filling and Strawberry pieces accessible rather than letting them sink to the bottom of a cone.
  • Ask for even folds. Request “extra folds” so the Lemon Pie Filling is distributed throughout rather than appearing as one large pocket.

Practical Tips

  • Request a freshly scraped stone surface if you have a cross-contact allergy concern, as staff are trained to accommodate this.
  • Eat from the top down if using a waffle cone, rotating after each bite to manage the moisture from the Strawberry pieces.
  • Cold Stone ice cream does not re-freeze to its original texture, so consume it immediately for best results.

How to Recreate Lemon Berry Batter At Home

Ingredients (1 serving)

Base:

  • 1 cup heavy cream
  • ½ cup whole milk
  • ¼ cup granulated sugar
  • 1 tsp pure vanilla extract
  • 1½ tsp lemon extract
  • 1 tsp cake batter flavoring (available at baking supply stores or online)
  • 2 tbsp heat-treated all-purpose flour (see notes)
  • Pinch of fine sea salt

Mix-Ins:

  • 4 to 5 Lemon OREO® cookies, roughly broken
  • 2 tbsp prepared lemon curd or lemon pie filling (store-bought is fine)
  • 3 tbsp fresh strawberries, hulled and quartered

Vessel (optional): 1 waffle bowl or waffle cone

Instructions

  • Make the base. Whisk together cream, milk, sugar, vanilla extract, lemon extract, cake batter flavoring, heat-treated flour, and salt until the sugar fully dissolves. Chill for at least 2 hours.
  • Churn. Process in an ice cream machine until soft-serve consistency, about 20 to 25 minutes.
  • Freeze your surface. Place a marble slab or small baking sheet in the freezer for at least 1 hour.
  • Fold the mix-ins. Transfer ¾ cup churned ice cream onto the frozen surface. Add the broken OREO® pieces, lemon curd dollops, and strawberry pieces on top. Using a bench scraper, chop and fold (do not stir) 6 to 8 times until distributed. Work quickly to keep the ice cream dense.
  • Texture check. The ice cream should feel like thick gelato. If it softens too much, return to the freezer for 5 minutes before continuing.
  • Serve in a waffle bowl, cone, or cup immediately.

Notes

  • Heat-treating flour. Bake on a sheet at 350°F for 5 minutes or microwave in 15-second bursts until it reaches 165°F internally. Cool before using.
  • Lemon curd vs. lemon pie filling. Store-bought lemon curd works well and is often more intensely flavored than canned lemon pie filling. Either produces a close result.
  • No-churn option. Fold the base ingredients into 1 cup of whipped heavy cream with ½ cup sweetened condensed milk. Freeze in a loaf pan for 4 to 6 hours. Texture will be lighter than the original.
  • Storage. Press plastic wrap directly against the ice cream surface before covering. Best consumed within 1 to 2 hours as home-frozen ice cream develops ice crystals quickly without commercial stabilizers.

Cold Stone allows additional mix-ins for an upcharge per item. Lemon Berry Batter already has a well-developed flavor architecture with four components working in a citrus-berry direction. The most effective additions are those that reinforce or extend the brightness (more fruit, more citrus) or introduce a single counterpoint (sweetness, chocolate, crunch). Stacking more than three to four total mix-ins risks muddying the clean citrus profile that makes this Creation™ distinctive.
